What’s great about this dish is that it looks fancy and is easier to create than it may seem. Take a quick run to the grocery store and gather up the following ingredients to make these scrumptious dumplings filled with mashed potatoes, cheese, and mushrooms. This nutrient-filled dish is flavorful and hearty, making it ideal for providing comfort. These dumplings take 30 minutes to prepare and 18 minutes to cook.
Ingredients
Dough:
- 2 cups Sour Cream
- 3 cups Vegan All-Purpose Flour
Filling:
- 1 tbsp. Salted Butter
- ½ tsp. Salt
- ½ tsp. Pepper (freshly ground)
- 1 ½ cup Mashed Potatoes
- 8 oz. Fresh Mushrooms (finely chopped)
- 1 cup Onions (finely chopped)
Garnishing:
- ½ cup Sour Cream
- Sautéed Mushrooms
- ¼ cup Chives (finely chopped)

Instructions:
Dough:
- To prepare the Pierogi dough, mix two cups of sour cream with 3 cups of all-purpose flour in a large bowl.
- Use a wooden spoon to stir the ingredients together until they form a dough-like consistency.
- Next, place the dough on a surface dusted with flour. Take care not to overwork it, and softly knead it for 2 to 5 minutes with your fingertips. Knead the dough until it is smooth on the exterior and the ingredients are well combined.
- Once the dough is formed, turn it into the shape of a ball and wrap some cling film around it, allowing it to rest for at least 20 minutes.
Pierogi Filling:
- The filling is an essential part of this recipe. To prepare it, start by melting the butter in a large pan over medium-high heat.
- Next, add one cup of finely chopped onions and sauté them for 2 to 3 minutes.
- Then add the chopped mushrooms and season with salt and pepper.
- After adding the mushrooms, mix the ingredients till the onions and mushrooms caramelize.
- Lastly, take a bowl and mix the mashed potatoes, mushrooms, and cheese.
Pierogi:
- Take one tablespoon of dough and roll it flat using a rolling pin on a floured surface. Keep the disks covered to prevent them from drying out.
- Add one tablespoon of filling to each disc’s center, and then fold it in half in the shape of dumplings. Seal the edges using a fork.
- Next, boil water in a large pot and add the dumplings in batches of five; let them cook while stirring occasionally. Once they have floated to the top, cook them for an extra 3 minutes and then plate them using a spoon.
- Lastly, melt butter in a nonstick pan, add five dumplings at a time, and cook until they are golden brown.
- You can serve them with sautéed mushrooms and cream and add chives for garnish.
