Easy And Delicious Comfort Food Recipe For European-Style Dumplings

Ingredients

Dough:

  • 2 cups Sour Cream
  • 3 cups Vegan All-Purpose Flour

Filling:

  • 1 tbsp. Salted Butter
  • ½ tsp. Salt
  • ½ tsp. Pepper (freshly ground)
  • 1 ½ cup Mashed Potatoes
  • 8 oz. Fresh Mushrooms (finely chopped)
  • 1 cup Onions (finely chopped)

Garnishing:

  • ½ cup Sour Cream
  • Sautéed Mushrooms
  • ¼ cup Chives (finely chopped)

Instructions:

Dough:

  1. To prepare the Pierogi dough, mix two cups of sour cream with 3 cups of all-purpose flour in a large bowl.
  2. Use a wooden spoon to stir the ingredients together until they form a dough-like consistency.
  3. Next, place the dough on a surface dusted with flour. Take care not to overwork it, and softly knead it for 2 to 5 minutes with your fingertips. Knead the dough until it is smooth on the exterior and the ingredients are well combined.
  4. Once the dough is formed, turn it into the shape of a ball and wrap some cling film around it, allowing it to rest for at least 20 minutes.

Pierogi Filling:

  1. The filling is an essential part of this recipe. To prepare it, start by melting the butter in a large pan over medium-high heat.
  2. Next, add one cup of finely chopped onions and sauté them for 2 to 3 minutes.
  3. Then add the chopped mushrooms and season with salt and pepper.
  4. After adding the mushrooms, mix the ingredients till the onions and mushrooms caramelize.
  5. Lastly, take a bowl and mix the mashed potatoes, mushrooms, and cheese.

Pierogi:

  1. Take one tablespoon of dough and roll it flat using a rolling pin on a floured surface. Keep the disks covered to prevent them from drying out.
  2. Add one tablespoon of filling to each disc’s center, and then fold it in half in the shape of dumplings. Seal the edges using a fork.
  3. Next, boil water in a large pot and add the dumplings in batches of five; let them cook while stirring occasionally. Once they have floated to the top, cook them for an extra 3 minutes and then plate them using a spoon.
  4. Lastly, melt butter in a nonstick pan, add five dumplings at a time, and cook until they are golden brown.
  5. You can serve them with sautéed mushrooms and cream and add chives for garnish.
