The colder seasons of fall and winter is the perfect time to bake some sweet warm treats to enjoy with the whole family. This quick recipe only requires a few ingredients that are great for a simple sweet treat or snacks for guests when you’re hosting. This dessert is a delicious taste of festival fall flavors with this recipe yielding 24 servings.
Equipment:
- Microwave-Safe Bowl
- Large Mixing Bowl
- Baking Sheet
- Parchment Paper
- Toothpick
Ingredients:
- 1 cup White Chocolate Chips
- 16 oz. White Candy Melts (or more white chocolate chips)
- ¾ cup Gluten-free Gingersnaps (finely ground)
- ¼ tsp. Cinnamon or Pumpkin Pie Spice (additional amount for garnish)
- ¾ cup Gluten-free Graham Crackers (finely ground)
- 4 oz. Cream Cheese (softened)
- ½ cup Pumpkin Puree
- 2 ½ tbsp. Confectioner Sugar
- 1/3 cup Pecans (chopped, plus extra for garnish)
Directions:
- Place the white chocolate chips in a microwave safe bowl and heat in the microwave until melted to a smooth consistency. (it’s recommended to follow the package directions for melting chocolate).
- Combine the sugar, melted chocolate, pecans, pumpkin puree, ginger snaps, cream cheese, and graham cracker evenly.
- Place the mixing bowl in the fridge or freezer to chill for 30-45 minutes until the mixture is pliable enough to form into truffle balls.
- Prepare the baking sheet by lining it with parchment paper.
- Remove the mixing bowl from the fridge and start rolling the chilled mixture into 1-inch balls.
- Place the baking sheet in the freezer to set truffles until frozen for about 2-3 hours.
- Before removing the truffles from the freezer prepare by heating candy melts or white chocolate chips.
- Remove the truffles from the freezer and use a toothpick to poke into truffles to dip into chocolate coating the entire surface. Allow the excess melted chocolate drip off excess chocolate.
- Place the chocolate-dipped truffles back on parchment paper-lined baking sheet.
- Garnish truffles with cinnamon or pecans.
- Allow the truffles to set and harden completely.
- To help harden and set the truffles. You can place the pan in the fridge for a few minutes to set the chocolate coating.
- Serve and enjoy!
